I use and love Mozilla Thunderbird for email. It's flexible, fast, compatible and with a little extra plumbing, slices, dices and cleans up the mess. Here are a few add ons I've found indispensable.
NotTo - Ever want a way to make sure you don't send emails to a specific person? Even if they are on a list? NoTo prevents accidental message forwards!
PlaxoSync - Keeping Outlook, Gmail, Yahoo, Thunderbird and the kitchen sink synced since 2006.
Remove Duplicate Messages - Says what it does, does what it says.
QuoteColors - Makes it a lot easier to read messages. Especially 18 deep in a thread.
Sender Verification - Helps you spot evil emails like phishes and spam.

I already use the Quote
I already use the Quote Colors, and that's a great one to have. One I added is called Lightning, which adds a calendar function that also includes a task list, and man, I really needed that one. :-)
